For most people, parks and beaches are places to take the dog for a walk or gather with a few friends for a picnic. But for chef Niall O’Sullivan and restaurant owner Paul Quinn, these outdoor spaces are a natural supermarket.
Along with David Gallagher of Redmond Fine Foods, the pair founded the Nadúr Collective about two years ago as a way to share their passion for wild food with the public. One of the main ways they do this is by leading foraging walks in Co Wicklow, so on a very brisk but sunny autumn morning, I head to Greystones to see what this age-old tradition is all about.Food
